Sharbat 'e Sekanjebin - A Refreshing Global Lemonade

Amir Mansouri shares his family recipe for Sekanjebin, which is syrup made with vinegar, mint and sugar, and the basis for a most refreshing lemonade: Sharbat ’e Sekanjebin.

Ingredients

SERVINGS: one bottle of syrup
  • 2 pounds sugar
  • 1 cup of vinegar
  • 2 cups of boiling water
  • 1 bunch fresh mint (spearmint, peppermint or another aromatic mint)

Preparation

Pour the hot water into a pot over low-medium heat. Add the sugar right away into the pot. Mix the sugar and water together for 1 minute or until thickened.

Add vinegar and continue to mix until the sugar is fully dissolved and the mixture starts to boil again.

Add the mint (slowly mix for a couple of minutes) and let the mixture boil for 10–15 minutes uncovered (or until the syrup has thickened and feels sticky).

Let the syrup cool down. Remove the mint from the syrup.

To make the drink
For a traditional Sharbat ’e Sekanjebin, dilute 1 part syrup with 5 parts water (it depends also on your sweet preference) and mix well. Pour into glasses and add ice, shredded cucumber and fresh mint.

GROWN-UP Option: Add Mint vinegar syrup, cucumber and ice cubes… add a dash of Vodka, a pinch of cayenne and fill it up with sparking water for a summer cocktail!
